The Ultimate BBQ Zucchini Salad is a healthy but flavourful vegetable side dish made with fresh corn, zucchini, tomatoes, onions & herbs. A delicious summer salad that is amazing on its own or as a side!

Healthy Eating Promotes Healthy Ageing

There are many ways our bodies change as we get older, including perceptual, physiological and general age-related conditions. These changes all influence the performance of each person’s body as a whole, which in turn affects our quality of life. Elder adults can improve their quality of life by investing in healthy ageing & having healthy eating habits.

On each Tuesday For the next four weeks, Lions Gate Home Care will be posting a delicious and healthy #TastyTuesday recipe that will promote healthy eating. Lions Gate Home Care encourages people to consult with their healthcare team when it comes to their healthy eating habits. Things to consider: allergies, conflicts with medications and chronic conditions.

The Ultimate BBQ Zucchini Salad


  • 2 – 3 ears of corn

  • 2 tbsp extra virgin olive oil

  • 2 garlic cloves, minced

  • 1/2 cup finely diced red onion

  • 4 cups small-diced zucchini, (2 medium zucchini)

  • 1 cup of fresh mini tomatoes (cut in halves)

  • 1/4 cup fresh oregano leaves

  • 3-4 sprigs of fresh thyme

  • 1 1/2 limes

  • 1/4 cup fresh basil leaves, roughly chopped

  • Sea Salt and freshly ground black pepper to taste


BBQ corn

  • Trim husk and silk to help to avoid catching fire

  • BBQ corn on a preheated bbq at 500℉ for 15 minutes

  • Rotate once after seven minutes

  • Remove from BBQ and let cool enough to handle.

  • Remove husk & silk

  • Place back on the grill with a reduced temperature of 400

  • Brush with Extra Virgin Olive oil (kick it up with finely chopped garlic in the olive oil)

  • Remove from BBQ and let cool

  • Cut kernels from the cob

Remove corn from cob

BBQ Zucchini

Slice zucchini into sticks

  • Wash and cut zucchini into strips

  • Brush zucchini with Extra Virgin Olive Oil

  • Sea Salt and Cracked Pepper to taste

  • Grill at 450℉ for 5 minutes, flip and grill for an additional 5 mins. (or until desired grill marks are obtained)

  • Chop zucchini once cooled

Avoid over cooking- watch for grill marks
Grill as much or little as you like

While the corn and zucchini are cooling.

  • Chop fresh oregano and basil

  • Remove thyme from sprigs

  • Squeeze lime juice from 1 1/2 limes

  • Dice red onion

  • Dice garlic into really small pieces

  • Chop mini tomatoes in half

Place chopped zucchini, corn, red onion, herbs, garlic, olive oil & lime juice into a large bowl.

Salt & pepper to taste and mix gently.

Garnish with additional herbs, serve and enjoy!
